About The Job:
We're looking for that magic mix of FOH superstar with supersonic wine knowledge. We're an independent restaurant with a closely-knit team, so the right person needs to be dynamic and flexible in their day-to-day role. We aren't seeking cork junkies or grape sniffers or a waiter's- friend-twiddler watching their comrades running plates as they lean against the bar waiting for the next order of Crémant d'Alsace. We are seeking a proper, wine-loving, old-school all- rounder; someone who can run a service and the team with confidence and positivity and manage the ever-evolving cellar.
About Us:
Everything is a bit secretive in the lead up to our launch – we can’t even tell you our name yet!
What we can tell you is we’re a 40-seater restaurant with an expected 400 bins in the thumping heart of Shoreditch, with a focus on wine and food from the French/Italian boarder and her myriad neighbours; think Switzerland, northern Italy, southern and central France. We can't say much more about the kitchen at this point though we can confirm the project is being headed up by a 3 consecutive year Michelin-starred Chef Patron.
We are planning to curate (with your help) a remarkable, meaningful, award-worthy wine list celebrating and serving the most delicious, interesting, thirst-quenching drops around; think the finest wines available to humanity; think Savoie, Jura, Rhône, Provence, Valais, Vaud, Valle d'Aosta, Piedmont, Friuli-Venezia Giulia and Liguria; think world-class (not necessarily expensive) producers and cuvées, cult stuff, classic stuff, fizzy stuff, natty stuff, sweet stuff, classy stuff, all the stuff that thirsty dreams are made of.
About You:
You're an industry professional with a positive outlook looking for the next step up in your career. You've been some level of somm/wine co-ordinator in a customer supervisory role or something more senior. You are seeking a better work life balance in an establishment that requires and will nourish your personal and creative input. You are ready to bring your experience and knowledge to a new team, in a new restaurant, that you hope to one day call a home away from home.
