Brethren Brewing Company is a community-focused craft brewery in the heart of Manteca, California. We produce around 200 barrels annually on our 7 bbl system, specializing in bold, hop-forward IPAs (hazy, West Coast, juicy) and clean, crisp lagers that keep our taproom and locals coming back. We're family- and dog-friendly, with a welcoming taproom at 220 N. Main St., and we pride ourselves on quality, consistency, and a fun, low-drama environment where everyone pitches in.


Position Overview


We're looking for a reliable, self-motivated Brewer to handle production with a high degree of independence. This role is perfect for someone who enjoys owning their workflow, stays proactive, and has real passion/experience with IPAs and lagers. You'll run brewhouse days, manage fermentations and cellaring, keep everything spotless, and help maintain our small-scale operation. It's hands-on, physical work in a rewarding, community-driven brewery.


Key Responsibilities


  • Independently execute full brew days on our 7 bbl system: grain handling, mashing, lautering, boiling, precise hop additions (especially for IPAs—whirlpool, dry-hopping, etc.), wort cooling, and transfers following recipes and SOPs.
  • Focus on IPA and lager excellence: monitor fermentations (gravity, temp, pH), handle yeast management/pitching/harvesting, schedule dry-hops, perform diacetyl rests and lagering for crisp, clean results.
  • Manage cellar tasks solo as needed: tank transfers, carbonation, bright tank prep, sensory evaluations, and quality checks to ensure every batch meets our standards.
  • Maintain rigorous, proactive sanitation and cleaning (full CIP on brewhouse, fermenters, brights, lines, and equipment)—critical in a compact setup.
  • Perform basic QC: sampling, lab readings, off-flavor awareness, accurate logging, and traceability.
  • Support packaging (kegging, occasional canning/bottling) and general brewery upkeep/inventory.
  • Troubleshoot issues independently, suggest small improvements, and keep the workspace safe and organized.
  • Adhere to all safety protocols, SOPs, and regulations.

Qualifications & Requirements


  • Genuine passion for craft beer, with strong preference for experience brewing IPAs and lagers (1-2 + years professional brewery work ideal).
  • Proven self-starter mindset—comfortable working independently, prioritizing tasks, and staying productive without constant oversight.
  • Previous brewery/production experience preferred; open to motivated candidates with transferable skills and eagerness to learn our system.
  • Physically fit for the job: repeatedly lift 50+ lbs, stand/walk for long periods, climb ladders, work in varying hot/cold/wet conditions, and handle chemicals/hoses safely.
  • Sharp attention to detail, solid basic math skills, and precision in following instructions/recipes.
  • Reliable transportation and scheduling flexibility (may include some weekends, early starts, or split shifts tied to the brew calendar).
  • 21+ years old.
